Persian Chickpea Cookie Recipe – Vegan!

  • 1 cup sifted powdered sugar
  • 1 teaspoon ground cardamom
  • 1 cup vegetable oil
  • 1 cup sifted fine chickpea flour
  • Ground pistachio, for decoration


  • STEP 1

  • Beat powdered sugar, cardamom and oil for 3 mins

  • STEP 2

  • Add chickpea flour and beat 1 more minute

  • STEP 3

  • Knead the dough 10 mins, if you feel it’s too dry add more oil (1tbs at a time)

  • STEP 4

  • Let it rest for 2 hrs (at room temp)

  • STEP 5

  • Preheat the oven to 300F

  • STEP 6

  • On a floured surface, roll out the dough to ½ inch thick. Cut out as many cookies as you can

  • STEP 7

  • Transfer to a baking sheet covered with parchment paper, decorate with pistachio and bake for about 15 mins but keep an eye on them after 10 mins (always bake 1 cookie first and time it to see how it goes, you don’t want to burn the whole batch! :D )

  • STEP 8

  • Let them cool on the baking sheet for at least 15 mins because they’re fragile when hot.

  • STEP 9

  • Decorate with more ground pistachios and rose petals if you like!
