Carte Noire, France’s favourite roast and ground coffee, as a delicious ingredient… The espresso pancakes are paired with a rich and creamy mocha sauce – it is a once-a-year occasion after all.

Espresso pancakes with mocha sauce

Serves 4
Prep time: 15 minutes
Cook time: 25 minutes
Pancake ingredients

  • 280g self-raising flour
  • 2tsp baking powder
  • 1tsp salt
  • 2tbsp caster sugar
  • 70g butter, melted
  • 2 eggs, beaten
  • 250ml whole milk
  • 1tbsp prepared Carte Noire Roast & Ground Coffee
  • 1tbsp oil

Mocha sauce ingredients

  • 150ml double cream
  • 30g butter
  • 100g milk chocolate, broken into small pieces
  • 1tbsp prepared Carte Noire Roast & Ground Coffee

Serve with 150g mixed berries and a fresh cafetière of Carte Noire Roast & Ground Coffee


In a large bowl, combine the flour, baking powder, salt and sugar.
Mix the cooled melted butter, eggs, milk and coffee. Gradually pour this liquid into the dry ingredients and whisk until smooth.
Heat the oil in a frying pan and drop a few large tablespoons of batter in, leaving room for them to spread out. Cook on a low heat until small bubbles appear. Flip each pancake and cook for 2-3 minutes or until puffed up and golden. Keep warm while you cook the rest of the batter in batches: it should make about 16.
To make the sauce, heat the double cream in a saucepan until nearly simmering. Turn off the heat and add in the butter and chocolate.
Add the coffee into the mixture. Stir gently until the chocolate has melted and the sauce has thickened slightly.
Serve 3-4 pancakes per person with mixed berries and the sauce poured over the top.
